Uluwatu, Bali

Some drinks begin with a recipe. This story begins with a wind.
Imagine a late afternoon somewhere along the Mediterranean. The stone beneath your feet still holds the heat of the day. Beyond the harbour, the sea catches the last of the sunlight, and a warm breeze moves through the narrow streets, carrying the feeling that somewhere, just beyond the horizon, another world is waiting.
That breeze is where our story of SIROCCO begins.
Named after the warm wind associated with the Mediterranean, SIROCCO is one of TAMAN’s signature cocktails: spiced rum, grilled pineapple, orgeat and citrus, brought together in a glass with a warm amber glow.
Its ingredients belong to the drink. The journey between them is yours to imagine.
One cocktail. Two worlds.
In our imagined story, the wind leaves the Mediterranean behind and keeps travelling.
It passes quiet harbours and open water, carrying memories of sun-warmed terraces and evenings that stretch long after dinner. Somewhere along the way, the air changes. Dry warmth gives way to tropical humidity. The scent of the coast becomes the scent of a garden after a hot day.
By the time it reaches Bali, the wind has found a different rhythm.
Here in Uluwatu, the evening unfolds between green leaves, low conversation and the sound of ice meeting glass. It is in this meeting of moods that SIROCCO finds its character: Mediterranean inspiration, expressed through tropical flavours.
There is warmth in it, but also brightness. A little richness, a little edge. Enough familiarity to draw you in, and enough contrast to make you take another sip.

The story inside the glass.
Spiced rum gives SIROCCO its warm centre. It is the thread running through the drink, bringing a rounded, aromatic character that suits the slow transition from afternoon to evening.
Grilled pineapple brings the tropical heart. Its fruitiness carries the deeper sweetness of pineapple touched by heat, adding a gently toasted dimension to the cocktail.
Orgeat lends a soft, nutty sweetness, connecting the fruit and spice with a sense of richness. Citrus provides the brighter counterpoint, cutting through that warmth and keeping each sip lively.
Together, these ingredients create a flavour profile that moves between sweet, fruity and spiced, with subtler smoky, bitter and nutty notes.
Look closely and the photograph tells part of the story, too: the amber colour, the light caught in the ice, the fresh mint rising above the rim. Before the first sip, there is already something to linger over.
When the garden changes pace.
Picture a table at TAMAN as daylight begins to soften.
Someone has arrived early. Someone else sends a message to say they are on the way. There is still time to look through the menu, order something to share and let the evening take shape without deciding too much in advance.
A SIROCCO arrives.
For a moment, the glass catches the light. There is condensation beneath your fingers and fresh mint close to your nose. The first sip brings pineapple and sweetness, followed by the warmth of rum and spice, with citrus drawing everything into focus.
Around the table, the conversation carries on. Plates arrive. Another chair is pulled closer.
This is the scene we imagine for SIROCCO: a drink woven into the evening, accompanying the small moments that make you want to stay a little longer.
A little further with every sip.
As the ice slowly melts, take your time with the glass. Notice which flavours you find first, and which ones become clearer when you return to it.
Perhaps it is the grilled pineapple that stays with you. Perhaps it is the spice, or the way the citrus lifts the richer notes. Everyone finds a slightly different route through the same cocktail.
That is part of the pleasure.
The Mediterranean and Bali are far apart on a map. In SIROCCO, the distance becomes an invitation to imagine: a warm coast, an open sea, a garden in Uluwatu and an evening with nowhere else you need to be.
